Edsa Shangri-La Mall is one of my most favorite malls. Less people inside a mall means less stress for me. And I got psyched to know that they’ve expanded!!! They now have East Wing!

We took a leisurely stroll one time after dinner, and below are photos of the soon-to-open stores to excite you! Something new to look forward to on your next trip to the mall. *wink*

There is this ramen craze circling Manila since last quarter of 2012 (I think) and I am not one to jump off and join the bandwagon until I heard about Ikkoryu Fukuoka Ramen. It is conveniently located at my favorite mall, Edsa Shangri-La. This Japanese ramen restaurant is one of the establishments that are soon to open at the new East Wing of Shangri-La mall (more on the new side of the mall on my next post!).

Ikkoryu Fukuoka Ramen is a new brand concept launched by Yamagoya Ramen, established since 1970, specializing in CHIKUHO noodles, Tonkotsu soup, Gyoza (Dumplings) and Chashu roast pork.

Tapping on over 40 years of the long tradition through constant innovation, Ikkoryu Fukuoka Ramen is making her debut to spread the Japanese Ramen culture internationally.

With a premium Japanese Ramen cuisine dine-in concept, we promise an indulgent, hearty delicious Japanese Tonkotsu Ramen catering to all who wish to experience an authentic Japanese eating lifestyle.

Ikkoryu was on their soft opening same time as the new East Wing side of the mall. Yet, there were a lot of people who “discovered” it and started dining in!

The interior was warm and inviting. The use of wood, red chairs and high stools by the open kitchen wall emphasized simplicity and modest design interior.

B and I ordered our ramen of choice. I went for something spicy, as expected. And he went for something garlic-y. I will get back to you on the names of our ramen.

Hers Ramen

I loved the soft pork slices, the mushroom and the bamboo shoots and most especially the pork broth. It really is tasty. The noodles was a bit softer but not soggy.

When asked how are they special from others also offering ramen in Manila aside from having a Japanese chef and importing major ingredients from Japan, they said it is their special Tonkotsu soup.

Tonkotsu Ramen, a very popular regional style of ramen, is a specialty of its origin Kyushu region in Japan. It is characterized by thin, straight noodles in rich creamy pork broth, which is the result of boiling pork bones with several seasonings for many hours to ensure the rich pork extract and hearty flavour.

All of their ramen is pork broth based or Tonkotsu-soup-based which makes it super tasty!

Their huge bowl serving was enough to pacify my growling tummy. But I’d like to go back next time to try their Gyoza and their promising desserts!
